What is the job like

Lana Lee Leazer
Heathrow Legacy Club

I’m the Club Maitre’d of a private country club in Heathrow FL.

A typical day for me includes taking reservations for our special dining events and everyday club dining at our many different Food & Beverage outlets. Reservations and seating arrangements take up most of my time especially during holiday events like Thanksgiving, XMAS, Easter, and the Fourth of July. I organize the dining area as far as table set up, table arrangements (large tables for celebrations like Birthdays, Graduations, Anniversaries), table service (3 course vs 5 course meals), decorations and designing table cards for our members, also table cards for our live action stations and special buffets. Train fine dining service and oversee the waitstaff during dining hours by assigning tables and dining room duties.

During service, I welcome members, show them their tables, describe and suggest food & wine options for their tastes, make sure they receive impeccable food and service. Keep the waitstaff and bussers on top of clearing plates, water service, and drink service.

Pros

Getting to know the members and their preferences. Building great relationships lead to great rewards (Large Tips). Everyday is different.. Tasting the amazing food that the Chefs come up with. Setting and decorating the tables for special holidays & events for members is always fun!

Cons

The job can be stressful if all doesn’t go to plan like broken dishes, dislike of an entree or wait times on table seating and receiving entrees. Trying to accommodate ALL preferences on tables- many members love the same dining tables.
